Even if you haven't given up on wheat, sugar or dairy, this Paleo pancake recipe doesn't compromise on taste.
1 cup of grated carrots
1/2 cup almond meal
1/2 cup canned coconut milk
1/4 cup walnuts, chopped (or pecans)
2 tablespoon coconut oil
4 tablespoon coconut flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon: cinnamon, ginger, nutmeg (I usually add more than this though!)
1 tablespoon honey (optional)
1 tablespoon of coconut butter, maple syrup and a few berries (to serve)
1. Mix all dry ingredients together in a large bowl.
2. Add wet ingredients to dry ingredients and mix thoroughly.
