Warm Quinoa and Chickpea Salad with Caper and Yoghurt Dressing

Plate up this superfood salad that contains enough protein to propel you through the toughest day.

Ingredients

1 cup quinoa, cooked in 2 cups of water
1 tsp fresh chilli
A handful of roasted pepitas
1/2 cup of basil, chopped
1 cup of green beans, blanched

1 1/2 cups capsicum, diced

Dressing
1 tbs capers, finely chopped
4 tbs full-fat yoghurt
2 tbs extra-virgin olive oil
1 tsp garlic, crushed
1 tsp agave nectar or honey

Method

1. Combine all ingredients together in a large bowl.
2. Make dressing: combine yoghurt, olive oil and honey in a jar. Add garlic and capers; stir dressing through quinoa mix.
