Coconut Chicken Soup with Chilli & Coriander

750ml chicken stock
2 kaffir lime leaves
1 tbsp Gourmet Garden Chilli
1 tbsp Gourmet Garden Garlic
600g chicken breast, thinly sliced
100g shittake mushrooms, finely sliced
227g can water chestnuts, drained and sliced
1 cup coconut milk
1 tbsp lime juice
1 tbsp fish sauce
2 tbsp grated palm sugar
1 tbsp Gourmet Garden Coriander
4 green onions, thinly sliced
2 kaffir lime leaves, finely shredded

Step 1
Heat chicken stock in a large saucepan. Add 2 kaffir lime leaves, Gourmet Garden Chilli and Garlic to pan. Simmer 10 minutes. Discard lime leaves.
Step 2
Add chicken breast, shiitake mushrooms and water chestnuts. Simmer for a further 5 minutes.
Step 3
Add light coconut milk, lime juice, fish sauce and palm sugar to pan. Stir to combine.
Step 4
Stir in Gourmet Garden Coriander. Ladle soup into serving bowls, garnish with green onions and 2 finely shredded kaffir lime leaves.
