Method
Method
Preheat oven to 170oC/160oC (Fan). Lightly spray a friand or muffin tin with cooking oil.
Combine all ingredients for friands in a large bowl (except for flaked almonds) and whisk well to remove lumps. Spoon batter into prepared tin, (batter will make approximately 8 friands depending on size of tin) and sprinkle with almonds. Bake for 20-25 minutes or until friands are golden and spring back when lightly touched.
While friands are cooking, combine orange juice and honey in a small pot on medium-high heat. Cook for 5-6 minutes until reduced by 3/4. Set aside.
Pour syrup over friands and allow to cool in tin.
To serve, eat as is or lightly warmed in microwave.
