Pistachio and dark chocolate dipped mandarin

Ingredients

2 mandarins
100g good quality dark chocolate
1 tablespoon roughly chopped pistachios
Pinch of sea salt

Method

Line a tray with baking paper.

Peel mandarins and break into segments.

Cut the chocolate into small pieces and place in a small heat-proof glass bowl. Half-fill a small pot with water and bring to a simmer. Place the bowl on top of the water (the steam will slowly melt the chocolate). Stir with a metal spoon until melted. Alternatively melt chocolate in the microwave.

Dip each mandarin segment (halfway to three-quarters of the way) into the melted chocolate and place on the prepared tray. Sprinkle with pistachios and sea salt and transfer to the fridge for 10 minutes or until chocolate is set.
