Apple walnut teacake

Ingredients

2 apples, peeled, cored
1 cup of sugar
1 teaspoon cinnamon
1 ½ cups of self-raising flour
125g butter, melted
1/3 cup milk
2 eggs
½ walnuts, roughly chopped

Method

Preheat oven to 180oC/160oC. Grease and line a 20cm round cake tin with baking paper.

Cut apples into thin slices, toss with 1 teaspoon of sugar and a pinch of cinnamon, set aside.

In a large bowl, combine remaining ingredients and use a wooden spoon to mix together into a batter (it will be slightly lumpy).

Pour batter into prepared tin and arrange apple slices on top. Bake on middle shelf of oven for 50 to 60 minutes or until a skewer inserted comes out clean. Leave to cool completely in tin before turning out.

To serve, cut into slices and serve with yoghurt or thickened cream.
