Spiced apple and goji berry breakfast chia

¾ cup chia seeds
300ml filtered water
2 pears, diced
2 apples, diced
½ cup lime juice
1 cup maple or agave syrup
200ml coconut cream (see notes)
1 tbs cinnamon
1 cup sultanas or currants
¼ cup goji berries
1 tbs fresh ginger, finely minced

Method
Put the chia seeds in a large bowl and slowly add the filtered water, stirring as you go to make sure there are no lumps.
Keep stirring for the first 10 minutes and watch just how thirsty these little seeds are. Leave them for 20 minutes to soak, but continue to stir occasionally to avoid clumping as the mix thickens (Remember you still have more liquid to add – the lime juice, syrup and coconut cream.)
Chop the fruit and prepare the rest of the ingredients. Add the fruit and the remaining ingredients and stir to combine.
Allow another hour or so to allow the chia seeds to do their thing. You can eat them sooner but leave them so they’re soft and plump and truly hydrating.
Tip If the mix feels too thick just add a little more water as desired.
Use double the amount of the tinned coconut cream. Freeze the remainder or use it in another recipe

For a raw food version of coconut cream, take one young coconut (one that still has the soft flesh inside) strain the coconut water and scoop out the soft flesh. Blend a little of the coconut water together with the flesh to create a thick coconut cream.
