Mango Lime Chia Pudding

1 ripe mango, diced
2.5 cm piece ginger, peeled, sliced
1 cup coconut milk
1 teaspoon maple syrup or honey
juice of 1 lime
1/4 cup chia seeds
1/2 cup flaked coconut, toasted
1/2 cup pistachios, toasted
1 teaspoon ground cinnamon, to dust
Method
Method
Combine the mango, ginger, coconut milk, maple syrup and lime juice in a food processor and blend until really smooth.
Pour the mixture into a bowl, add the chia seeds and whisk together to combine.
Pour the mixture into two 250 ml glasses. Let the puddings chill in the fridge for at least 3 hours, or overnight, then serve sprinkled with toasted coconut and pistachios and dusted with cinnamon.
