Steak Tacos

Ingredients

Steak Tacos
12.5 cm La Tortilleria Tortillas (can be ordered from latortilleria.com.au)
1/2 Red onion, diced
Thinly chopped Fresh coriander
Marinated Steak
Guacamole
Tomato Chipotle Salsa

Marinade
1 kg Trimmed skirt steak
1/2 Red Onion
1/2 fresh Jalapeno
1 clove Fresh garlic
1 tablespoon Olive Oil
1 tablespoon Worcestershire sauce
1 tablespoon freshly squeezed lime juice
2 teaspoons salt
1 teaspoon fresh cracked black pepper
10 grams Coriander

Tomato Chipotle Salsa
500 grams round Tomatoes
3 Chipotle in Adobo chillies (can be bought online)
2 teaspoons Salt
1 garlic clove
1 tablespoon fresh squeezed lime juice

Method

Marinate the Steak

Combine all the ingredients for the steak marinade in a blender and blend until smooth.

Cut the steak length wise into 4 pieces.

Add the steak to a big bowl and add the marinade. Firmly massage the marinade into the steak.

Cover the bowl and leave it in the fridge for 3 hours.

Prepare the Tomato Chipotle Salsa

Pre heat the oven to 250C with only the top element.

Place the tomatoes on a foil lined baking sheet and roast them for 30 minutes. Turn them over only once. The top and bottom of the tomatoes need to be black.

Let the tomatoes cool down slightly and place them in the blender.

Add the other ingredients and blend until smooth.

Build the Tacos

Pre heat a grill over high heat and grill the steak. Turn it over only once and cook it in the way you like it.

Cut the steak into small pieces, against the grain.

Warm the tortillas on a grill or in a hot pan with a little amount of oil.

Place some marinated steak on the tortilla.

Garnish with the diced Red onion and coriander to taste.

Pour some of the delicious salsa on the steak and top it off with some of your home made guacamole.
