How To Make Salted Caramel Ice Cream

According to Nigella Lawson, salted caramel is the class A drug of the confectionery world!


It’s even more addictive when combined with ice cream.

Ice cream expert, Anna Temellini from Gelatissimo’s Eat in Dessert restaurant at Watsons Bay shares tips on how to make this summer favourite at home.

The video shows you how to make caramel by simply melting and browning sugar, but this can sometimes result in a sticky and burnt pan.

If you find it hard to make caramel from scratch use condensed milk.

“Try the dulce de leche version by simply boiling a can of condensed milk in a pot with water,” she says.

Remember, sugar and salt naturally make gelato and all frozen desserts take longer to freeze.

“Your salted caramel gelato may come out a bit soft,” she says. “If it does, don’t panic, just freeze it for a bit longer and if necessary increase slightly the milk dosage to balance the ratio between sugar and fat."
