Waffles with fruit and double cream

  • 120g plain flour
  • 120g self-raising flour
  • 2 Tbsp icing sugar
  • 2 tsp baking powder
  • Pinch of salt
  • 4 eggs, separated
  • 350ml milk
  • 1 Tbsp olive oil
  • 2 Tbsp caster sugar
  • Canola oil spray, for greasing
  • Topping
  • Watermelon, rockmelon, honeydew, strawberries and double cream
  1. Method

  1. Sift flours, sugar, baking powder and salt into a bowl. Mix egg yolks, milk and oil in a separate bowl, add to flour mixture and stir gently.
  2. Whisk eggwhites and caster sugar until stiff peaks form. Fold into waffle mixture with a spatula just before cooking.
  3. Lightly grease preheated waffle iron with canola oil. Cook waffle mixture until golden. Serve with toppings of your choice.
