Many people have a can or two of coconut milk in their pantries, but it’s not always obvious how to incorporate the rich nut milk into your cooking. Not a problem, because here are five creative and delicious recipes that use coconut milk as the star ingredient.

1. Mango sago with coconut milk

This recipe is a refreshing fusion of coconut and mango. In a blender, add diced mango, coconut milk and condensed milk. After blending, transfer to a bowl and mix in boiled sago pearls (an edible starch made from the tissue of tropical palm trees). Pour the fruity sago into a glass, and top it off with fresh mango cubes. This recipe tastes best cold, so refrigerate before serving.

2. Coconut milk corn

This Cambodian dish calls for air-fried corn that’s been shucked and cut into quarters, topped with a sauce made from a combination of coconut milk, fish sauce, sugar and chives. Garnish with grated coconut, spices and more chives.

3. Banana coconut cobbler

Who doesn’t love cobbler? This coconut milk cobbler’s batter is made of flour, baking powder, shredded coconut, chocolate chips, sugar and chopped butter combined with buttermilk. Pour the batter over a caramelized mixture of coconut milk, brown sugar, vanilla extract and water boiling in a skillet. Then finish with a layer of banana slices before baking. 

4. Chicken caldereta with coconut milk

This flavorful recipe calls for seasoned chicken to be pan-sauteéd in minced garlic, onions, coconut milk, tomato sauce and more spices. Combine the mélange with cooked diced carrots, peppers and slices of cheese. Serve and enjoy! 

5. Minted spring pea and asparagus soup with coconut milk

This recipe is a yummy combination of peas, asparagus and coconut milk. Begin by adding coconut oil, minced garlic, mint leaves, peas and vegetable broth to a pot. When the stew comes to a boil, add in some oven-cooked asparagus and coconut milk. Then pour the mix into a blender. Once smooth, serve the soup with an asparagus garnish in the center of the bowl.
