Greek eggs on toast

A healthy option for breakfast on the go!

Ingredients

  • 2 tbs semi-dried tomatoes
  • ¼ cup basil leaves, packed
  • 3 kalamata olives, seeded
  • ½ clove garlic
  • 1 tbs fetta cheese
  • 1 slice linseed and soy toast
  • 1 egg

Method

In a food processor, combine tomato, basil, olives and garlic. Once well-minced, stir in the fetta. Spread 1 tbs pesto mixture on toast.

Poach the egg. Place the egg on top of pesto-spread bread. Top with remaining pesto mixture, as pictured. Serve immediately.
