Slow Food - Caramelised Onion & Goats Cheese Omelette

A weekend brunch delight!

Ingredients

  • 1 red onion
  • 1 tbs butter
  • 2 tbs sugar
  • 4 eggs
  • 40g goats cheese
  • 2 handfuls rocket
  • olive oil
  • 1 tbs lemon zest

Method

Fry the red onion with butter until lightly browned. Add sugar and cook till it's sticky like a jam. Remove from frypan.

Whisk eggs lightly and pour onto saucepan. Add cheese and onions when egg underside is firming.

Cook the flipside and remove. Serve hot. Drizzle rocket with olive oil and sprinkle lemon zest on top.

    I plan to try this tomorrow. Sounds and looks terrific, but I don't know what "rocket" is - some kind of greens or lettuce? I'm American.
