
Caraway Calmer
2 teaspoons of caraway seeds
1 teaspoon of fennel seeds
A twist of lemon zest
2 teaspoons of honey
A pinch of allspice powder
1 sprig of lemon balm (mint is a good substitute)
Simmer 1 cup of water with caraway and fennel seeds, a twist of lemon zest, honey and allspice for 5 minutes. Strain.
Good for: Easing anxiety
Relaxing Lavender Tea
2-3 sprigs lavender
3 thin slices of ginger root
1 teaspoon of honey
3 cardamom pods
Take 2–3 sprigs (or enough to fill 1/4 of a cup) of lavender. Pour over 1 cup of boiling water, add ginger root, honey and cardamom pods. Crush well with a spoon. Stand for 5 minutes then strain.

Sage and Peppermint Tea
1⁄4 cup of fresh sage leaves
1 thumb-length sprig of peppermint
A little honey
A squeeze of lemon juice
Pour 1 cup of boiling water over fresh sage leaves and of peppermint. Stand for 5 minutes, strain. Sweeten with a little honey and add a squeeze of lemon juice.
