This sexy little gluten-free grain is beloved not only for its nutritional benefits but because of its chamelon nature: one minute it's popping up in a salad and the next it's been stewed as a porridge. Rich in protein, iron, fibre and magnesium, it's a fabulous friend to coeliacs.
