• 400g lamb mince
• 2 tbsp Gourmet Garden Fresh Blends™ Moroccan
• 1 small onion, finely chopped
• 1/3 cup dried breadcrumbs
• 1 tbsp Gourmet Garden Coriander
• 1 zucchini, thinly sliced
• 1 1/3 cup couscous
• 1 1/3 cup boiling water
• 200g roasted red capsicum, chopped
• 80g baby spinach leaves
• 1 tsp Gourmet Garden Coriander
• ½ cup natural yoghurt
Procedure SERVES 4
Step 1
Combine lamb mince with Gourmet Garden Fresh Blends Moroccan, onion, breadcrumbs and 1 tbsp Gourmet Garden Coriander in a bowl. Roll level tablespoons of mixture into balls.
Step 2
Heat a large oiled non-stick frying pan over medium heat. Cook meatballs for 7 – 10 minutes or until browned and cooked through. Remove from pan. Add zucchini to pan. Cook for 1 minute. Remove from pan.
Step 3
Combine couscous with boiling water in large heatproof bowl, cover; stand about 5 minutes or until water is absorbed. Fluff couscous with a fork.
Step 4
Add roasted red capsicum, baby spinach leaves and zucchini. Stir to combine. Stir 1 tsp Gourmet Garden Coriander through natural yoghurt and serve meatballs & couscous.
