PANNA COTTA
300ml thickened cream¾ tsp powdered gelatine
VODKA STRAWBERRIES
2 punnets small strawberries, washed1 Dissolve gelatine (see tip). Meanwhile, add the cream and sugar to a small saucepan. Halve vanilla pod and scrap the black seeds into cream. Bring to the boil, stirring gently. Remove from heat. Add dissolved gelatine to warm cream mix and stir well. Pour evenly into four ½-cup capacity moulds. Store in refrigerator on small tray. Allow at least 4 hours to set, or leave overnight.
2 Using a large frypan, dissolve sugar with vodka, balsamic vinegar and water. Add strawberries and toss quickly in hot liquid for 2–3 minutes. Remove from pan and cool. Place in fridge to chill.
3 To serve, use a sharp knife to run around the edge of the panna cotta. Gently ease onto a plate, spoon on vodka strawberries and syrup.TIP OF THE WEEK
For best results when dissolving the powdered gelatine, sprinkle it over 1 tbsp cold water. Leave to sit until spongy, about 10 minutes. Then add 1 tbsp of almost boiling water and stir until dissolved.
