This recipe is a modern take on the classic rice pudding. It's cooked on the stove top using arborio rice, similar to a sweet risotto. The end result is creamy, velvety and delicious, and can be eaten straight from the pot! To really delight your guests, finish it with a date puree, which gives a wonderful caramel flavour, and add pistachios for crunch and texture. Or try serving it with poached fruit such as rhubarb or pear.

Tired of the same old pasta dishes week in, week out? This is a wonderfully easy version of the French dish ratatouille — simply dice the vegetables, roast and serve. The peppers, tomato and balsamic give the dish a sweet edge, together with the melt-in-the mouth eggplant. The dish is best finished with crumbled soft feta and peppery rocket. Bon appetit!

Roast dinners never go out of fashion, and lamb is a classic. But instead of roasting a leg, how about cooking a shoulder? One of the cheaper cuts, with slow cooking it breaks down to a beautifully soft meat full of flavour. The longer you leave it to cook, the more easily it falls apart, so there's almost no need for carving.

Need a meal to cheer up your day? This bright curry will do the trick. The vivid colour comes from the turmeric, a deep-yellow powdered spice used in many Asian recipes. This dish really comes alive when you add chilli, kaffir lime and coconut. Try out the wild rice (see Tip); it adds a lovely nutty flavour and interesting texture to plain rice.

The secret to making this pasta dish really work is the quality of the sausages, so make a trip to your local butcher and buy the best. Cooking the sauce with fresh fennel gives it a wonderful aniseed flavour that blends perfectly with the tomato, olives and pork. If you can't find rollini, spaghetti or penne can be used.
