Mussels in Tomato Sauce

Ingredients

  • 1 Kg Mussels (we catch our own fresh of the old timber jetty)
    2 x 410g cans Ardmona Crushed Tomatoes
    50 grms butter
    1 x brown onion diced
    3 x cloves of garlic crushed
    1 x red capsicum diced
    1 x small red chilli sliced thinly
    1 x cup of dry white wine
    3 x table spoons of light sour cream
    Salt and pepper to taste

Method

1. Place the mussels in a stainless pot, with half of the wine, simmer until mussels open.
2. In a saucepan, melt butter, add onions, capsicum, garlic, stirring until onion is transluscent.
3. Add the Ardmona Crushed Tomatoes and the remainder of the white wine, chopped chilli, salt and pepper.
4. Simmer for approximately 5 minutes, until sauce is hot
5. Reduce heat, and add sour cream.
6. Add mussels and stir thru sauce.
7. Serve immediately with fresh crusty loaf!
