Orange pork and snake beans

Ingredients

  • ½ cup char sui sauce
    2 Tbsp light soy sauce
    Finely grated rind and juice of 1 small orange
    500g pork fillet, trimmed of fat and sinew, halved
    450g Hokkien noodles
    2 cloves garlic, thinly sliced
    5cm-piece ginger, peeled, thinly sliced, cut into strips
    1 bunch snake beans, trimmed, cut into 5cm lengths
    3 green shallots, sliced
    1 tsp sesame oil
    ½ tsp dried chilli flakes
    Extra rind of 1 orange, shredded

Method

1. Combine char sui, soy, orange rind and juice in a large heavy-based wok over a medium heat. Slowly bring to the boil, then reduce to a simmer. Add pork and cook, covered, for 20-25 minutes. Transfer to a plate and set aside. Reserve remaining sauce in a bowl.

2. Put noodles in a medium bowl. Cover with cold water, then using your hands, separate noodles. Drain, then set aside.

3. Add garlic, ginger, beans, shallot and sesame oil to wok and toss to combine. Add noodles, stir to combine, then cook for 1-2 minutes or until beans turn bright green. Stir in reserved sauce.

4. Thinly slice pork across grain. Serve noodle mixture topped with pork, and sprinkled with chilli flakes and extra shredded orange rind.
