Steak Sandwich with Capsicum and Onion

An easy and tasty meal that will boost your kilojoule burn

Ingredients

230 g rump steak, trimmed of fat and thinly sliced
2 tbs coriander leaves, chopped
2 garlic cloves, crushed
1 Spanish onion, thinly sliced
1 green capsicum, thinly sliced
1 bird’s-eye chilli, finely chopped
1/4 tsp salt
4 wholemeal hot-dog buns
4 slices (85 g) reduced-fat Swiss cheese

Method

1. Heat oven to 180°C. Combine steak, coriander and garlic in a medium bowl and toss to coat.
2. Coat a large frypan with olive-oil cooking spray and heat over medium-high heat. Add steak and cook, turning twice, until edges are light brown but centre is still pink, 3 to 4 minutes. Transfer steak to a plate.
3. Spritz the same pan with cooking-oil spray and add onion, capsicum, chilli and salt. Reduce heat to medium and cook, stirring occasionally, until capsicum is soft, 7 to 8 minutes.
4. Put buns on a baking tray and lay 1 cheese slice on each. Warm in oven until cheese melts, approximately 5 minutes.
5. Add steak and onion-capsicum mixture to buns and serve immediately.
