Chilli-and-Sweet-Corn Salad

A delicious salad that packs in fibre, protein and fat-fighting chilli

Ingredients

4 corncobs, kernels removed
4 long red chillis
2 cups cucumber, diced
2 cups coriander leaves, roughly chopped
2 tbs lime juice
2 tsp green Tabasco sauce

Method

1. Preheat oven to 180°C. Place corn kernels on a baking tray with whole chillis and roast in oven for 25 minutes. Turn every 5 minutes to prevent burning.
2. Remove from oven and transfer corn to a large bowl; let cool. Remove skin and seeds from chillis.
3. Combine chilli, cucumber and coriander with corn. Stir through lime juice and Tabasco sauce, and serve.
