The Main Mash

1. Peel and quarter 1.8kg cream-delight potatoes. Place in a large pot, cover with 10cm of cold water and bring to the boil.

2. Add 1 tsp sea salt and simmer potatoes until tender, about 15 minutes. Reserve 1 cup of cooking liquid and drain potatoes in colander.

Return potatoes to pot with 1 cup warm low-fat milk, 1/4 cup unsalted butter and 1/2 cup reserved liquid. Mash with potato masher until almost smooth, adding more cooking liquid as needed.

Season to taste with sea salt and pepper.

    Why on Earth would you garnish it while it is still in the saucepan? What a ridiculous photo. The saucepan looks like one that grandma donated for scrap metal during world war 1.
