1/2 cup low-fat mayonnaise
1/2 cup low-fat sour cream
2 cups baby spinach
1 1/2 cups fresh herbs (such as basil, chives, chervil and tarragon), coarsely chopped
2 shallots, green parts only, chopped
1 tbs anchovies, chopped
1 tbs fresh lemon juice
1. Cracked black pepper, to taste
2. Combine all ingredients in a food processor; pulse until mixture is smooth and green.
3. Transfer dip to a serving bowl, season with cracked black pepper and serve.
