Soft-boiled eggs with ‘Italian soldiers’

This is a great new twist on the kiddie favourite of eggs and soldiers. The soldiers would also make a nice change from a sandwich for lunch, if made in double the quantity.

Ingredients

1 egg
2 bread sticks
2 slices prosciutto

Method

1. Put a large pan of water on a high heat and bring to the boil, then reduce the heat slightly to a brisk simmer. Using a spoon, gently lower in the egg and cook for 4 minutes (for a runny yolk and a set white).
2. Meanwhile, break the bread sticks in half and cut the slices of prosciutto in half lengthways. Wrap one piece of prosciutto around each of the bread stick halves, starting at the broken-off end. Wrap twisting downwards and slightly overlapping, so that around two-thirds of each bread stick is wrapped in the meat. Press the prosciutto firmly on itself to seal. You now have four ‘Italian soldiers’.
3. Transfer the egg to an egg cup and cut off the top. Your child can dip the soldiers in the egg yolk and enjoy!
