Beef patties in tortilla pockets

Combine beef patties and tortillas for a truly yummy recipe!

Ingredients

400g beef mince
1 small onion, chopped
1 carrot, peeled and chopped
35g packet taco seasoning
2 cups fresh parsley leaves
1/4 cup packaged breadcrumbs
8 flour tortillas
1/2 cup avocado dip
Butter lettuce leaves, sliced tomato and grated cheese, to serve

Method

1 Get your little kid in the kitchen to place beef, onion, carrot, seasoning, parsley and breadcrumbs in a food processor. Process until combined.

2 Divide beef mixture into 16 equal portions. Shape portions into flat patties. Place on a greased oven tray.

3 Cook in a very hot oven (240C) for about 20 minutes, turning patties over halfway through cooking, until browned and cooked through.

4 Spread tortillas with dip. Top with lettuce leaves, tomato and patties. Sprinkle with cheese. Fold into pockets.

Notes

- Chicken, pork or lamb mince can be used in place of beef in this recipe. For a change, get the kids to roll tablespoons of mixture to make meatballs. Serve with spaghetti and tomato pasta sauce.

- If taco seasoning is a little too spicy, simply use 2 cloves garlic and 2 tblsps barbecue sauce instead.
