Ingredients

  • 1 cup rolled oats
    1 cup plain flour
    Half cup desiccated coconut
    Half cup CSR Raw Caster Sugar
    Half cup macadamia nuts, roughly chopped
    Half cup sultanas
    Half cup sweetened dried cranberries
    Half cup Nestle White Choc Bits
    175g unsalted butter, chopped
    Third of a cup golden syrup

Method

1 Grease a 19cm x 30cm lamington pan. Line base and sides with baking paper.

2 Combine oats, flour, coconut, sugar, nuts, fruit and chocolate in a large bowl.

3 Place butter in a small saucepan. Stir over a low heat until melted. Remove. Stir in golden syrup. Mix well. Pour mixture over oat mixture. Stir until well combined. Press over base of prepared pan.

4 Cook in a moderate oven (180C) for about 20 minutes, or until browned. Remove from oven. Place pan on a wire rack. Cool in pan.

5 Holding onto lining paper, lift slice from pan. Discard lining paper. Place slice on a chopping board. Using a sharp knife, cut into rectangles to serve.

Notes

- This slice can be made up to one week ahead and stored in an airtight container. Try melting 50g dark chocolate and piping it over the bars for an extra special treat.
