Quick Nachos

A delicious afternoon snack to fill hungry tummies.

Ingredients

1/2 cup mild tomato salsa
1 green spring onion, thinly sliced
1/2 avocado
2 tsps lemon juice
100g packet corn chips
1/4 cup grated pizza cheese
Light sour cream, to serve
Extra thinly sliced green spring onion, to garnish

Method

1. Combine salsa and spring onion in a small bowl.
2. Place avocado flesh in a small bowl. Mash. Add lemon juice. Stir to combine.
3. Place corn chips in a shallow heatproof serving bowl. Top with salsa mixture. Sprinkle with grated pizza cheese.
4. Cook under a hot grill, for about 2 minutes, or until cheese is melted.
5. Serve with avocado mixture and sour cream. Garnish with extra sliced spring onion.

Notes

Remember to choose a mild tomato salsa for the kids.
