1. Grease a 20cm square cake pan. Line base and sides with baking paper.
2. Place all ingredients, except icing sugar mixture and cream, in the small bowl of an electric mixer. Beat on low speed until just combined. Increase speed to medium. Beat for about 3 minutes, or until smooth and changed in colour. Pour into pan.
3. Cook in a moderate oven (180C) for about 45 minutes, or until cooked when tested (cover loosely with foil during cooking if over-browning). Stand cake in pan for 5 minutes before turning onto a wire rack to cool.
4. Dust cake with sifted icing sugar mixture. Serve warm or cold with whipped cream.
