Banoffee Trifle

A great twist on an old favourite

Ingredients

2 x 380g cans Nestle Caramel Top 'n' Fill
1 / 4 cup brandy
1 / 4 cup warm water
2 x 300ml tubs thickened cream
250g sponge finger biscuits, chopped
2 ripe bananas, diagonally sliced
Extra 2 ripe bananas, diagonally sliced

Method

1. Place caramel, brandy and water in a bowl. Whisk until almost smooth.

2. Place thickened cream in a large bowl. Beat with an electric mixer until firm peaks form.

3. Arrange half the biscuits over base of a serving bowl (9-cup capacity). Layer with half the caramel mixture, half the cream and both bananas. Repeat layering with remaining biscuits, caramel mixture and cream. Cover and refrigerate, overnight.

4. Just before serving, decorate trifle with extra sliced bananas.
