Mussels in Passata

Ingredients

690g bottle gluten-free passata (tomato cooking sauce)
¾ cup white wine
1 lemon, rind finely grated and juice
2kg black mussels, cleaned, beards removed
2 tblsps chopped parsley
2 cloves garlic, finely chopped
3 green spring onions, finely sliced

Method

1 Place passata, wine and juice in a large stockpot. Bring to boil.

2 Add mussels. Cover. Simmer for 7 to 8 minutes, removing mussels as they open.

3 Combine rind, parsley, garlic and onions in a bowl. Sprinkle over top of mussels and passata to serve.
