Bucatini with Salmon & Cream Sauce

Ingredients

375g bucatini pasta
250g broccoli, cut into florets
2 salmon fillets (600g)
1 tblsp olive oil
2 zucchini, thinly sliced
½ cup sour cream
½ cup white wine
¾ cup grated parmesan
Fresh parsley, to garnish
Lemon wedges, to serve

Method

1 Cook pasta in a large pan of boiling, salted water until tender. Drain, reserving ¹/³ cup pasta

water. Boil or microwave broccoli until just tender. Drain.

2 Cook salmon, skin-side down first, in a large non-stick frying pan over a medium to high heat for 4 minutes on each side. Remove. Flake salmon. Discard skin.

3 Heat oil in same pan. Add zucchini. Cook, stirring, for 5 minutes, or until soft. Add cream, wine and parmesan. Stir until hot. Stir in pasta and broccoli. Season with salt and pepper. Stir in reserved pasta water and salmon.

4 Garnish with parsley. Serve with lemon wedges.
