Salmon & Cucumber Sandwiches with Lemon Cream Cheese

Lunch like the royals do with this delightful cucumber sandwich variation!

Ingredients

2 green cucumbers
12 slices white bread
12 slices smoked salmon

Watercress, to garnish

Lemon Cream Cheese

1 cup spreadable cream cheese
2 tsps finely grated lemon rind
2 tblsps lemon juice
2 tblsps finely chopped dill
Salt and pepper, to taste

Method

1 To make lemon cream cheese, combine all ingredients in a small bowl. Mix well.

2 Using a vegetable peeler, peel cucumbers lengthways into long, thin ribbons.

3 Spread lemon cream cheese over one side of each slice of bread. Divide smoked salmon over half the bread slices, trimming to fit. Top with cucumbers. Season with pepper. Top with remaining bread slices, cheese-side facing downwards.

4 Using a serrated or electric knife, cut crusts off sandwiches. Cut each sandwich into three fingers. Place on a serving plate. Cover and refrigerate plate of sandwiches until serving.

5 Serve garnished with watercress.

Notes

TIP Smoked ocean trout can be substituted for smoked salmon. It is available from your supermarket or specialty food store.
