Tequila & Blood Orange Friands

Take your morning tea to an exotic new level with this delicious treat!

Ingredients

250g unsalted butter, melted
1¹/³ cups almond meal
12/³ cups icing sugar mixture, sifted
2 tblsps finely grated blood orange rind
2 tblsps blood orange juice
1 tblsp tequila
½ cup plain flour, sifted
7 egg whites, whisked lightly

Sliced blood orange, to decorate

Icing

2 cups pure icing sugar, sifted
2 tsps tequila
1-2 tblsps blood orange juice

Method

1 Grease a 12-hole non-stick friand pan (½-cup capacity).

2 Combine butter, almond meal, icing sugar, rind, juice, tequila and flour in a large bowl. Fold in egg whites. Divide mixture evenly among pan holes. Smooth over tops.

3 Cook in a moderately slow oven (160C) for about 25 minutes, or until firm to touch. Cool in pan for 10 minutes, before turning out onto a wire rack to cool.

4 To make icing, stir icing sugar into tequila in a medium bowl. Add enough juice to give a goodpouring consistency.

5 Pour over friands. Decorate with sliced blood orange.

Notes

Tip: If your prefer a non-alcoholic cake, you can replace tequila with extra juice.
