Sausages with tomato & herbs

Make your snags really sizzle with this tasty twist on an old favourite.

Ingredients

8 (800g) thin flavoured sausages
2 onions, halved, thinly sliced
2 tsps dried mixed herbs
600g tomatoes, chopped
1 beef stock cube
1 cup boiling water
2 tblsps balsamic vinegar
390g packet garlic ciabatta, heated, to serve
150g packet baby rocket and spinach salad, to serve

Method

1 Cook sausages in a deep non-stick frying pan until cooked through. Remove and cut in half diagonally lengthways. Add onions and herbs to same pan. Cook, stirring, over a medium heat for 5 minutes, or until soft. Add tomatoes. Cook 2 minutes.

2 Dissolve beef stock cube in 1 cup boiling water. Add to pan along with vinegar. Simmer for 7 minutes. Add sausages. Simmer for 5 minutes. Season to taste.

3 Serve sausages with ciabatta and salad on the side.
