1 tblsp olive oil1 Heat half the oil in a frying pan over a medium to high heat. Cook mince in two batches, stirring occasionally, for about 4 to 5 minutes, or until cooked. Remove from pan. Cover to keep warm.
2 Heat remaining oil in same pan over a medium heat. Add onion, carrot and chilli. Cook, stirring, for about 3 minutes, or until carrot is soft. Add curry powder, peas and currants. Cook, stirring occasionally, for about 3 minutes, or until peas are tender. Return mince to pan. Cook, stirring, until hot. Season.
3 To make garlic lentil rice, heat oil and butter in a large saucepan. Add onion and garlic. Cook, stirring occasionally, for about 2 minutes, or until soft. Add lentils and rice. Cook, stirring, for 1 minute, or until hot.
4 Serve spicy beef over garlic lentil rice.
