Spicy beef with garlic lentil rice

Ingredients

1 cup olive oil
500g beef mince
1 small onion, chopped
1 small carrot, peeled, chopped
1 long red chilli, thinly sliced
1 tblsp curry powder
1 cup frozen peas
1 cup currants

Salt and pepper, to taste

Garlic Lentil Rice

1 tblsp olive oil
25g butter
1 small onion, halved, thinly sliced
4 cloves garlic, sliced
400g can brown lentils, drained
250g packet microwaveable basmati rice

Method

1 Heat half the oil in a frying pan over a medium to high heat. Cook mince in two batches, stirring occasionally, for about 4 to 5 minutes, or until cooked. Remove from pan. Cover to keep warm.

2 Heat remaining oil in same pan over a medium heat. Add onion, carrot and chilli. Cook, stirring, for about 3 minutes, or until carrot is soft. Add curry powder, peas and currants. Cook, stirring occasionally, for about 3 minutes, or until peas are tender. Return mince to pan. Cook, stirring, until hot. Season.

3 To make garlic lentil rice, heat oil and butter in a large saucepan. Add onion and garlic. Cook, stirring occasionally, for about 2 minutes, or until soft. Add lentils and rice. Cook, stirring, for 1 minute, or until hot.

4 Serve spicy beef over garlic lentil rice.
