1. Whisk together the egg shite, onion, coriander, cumin and salt in a medium bowl.
2. Add the turkey and mix until just blended.
3. Shape into 8 burger patties, about three inches thick.
4. Heat a skillet coated with cooking spray over a medium heat. Cook the burgers, turning once, for 6 minutes or until well browned and a thermometer inserted in the thickest portion registers 74 degrees.
5. Place the bottoms of two dinners rolls on four plates. Top with one piece of lettuce and one tomato slice.
