Turkey sliders

Get more turkey in your diet with these protein-packed handfuls of goodness.

Ingredients

1 egg white, beaten
1/2 small red onion, minced
1/4 cup fresh coriander
1/2 tsp ground cumin
1/4 tsp salt
500g extra-lean ground turkey breast
8 wholegrain dinner rolls, cut in half
4 lettuce leaves, halved
2 plum tomatoes, each cut into four slices
1 avocado, sliced
(Also add sliced onion or pickled jalepenos as topping if you like)

Method

1. Whisk together the egg shite, onion, coriander, cumin and salt in a medium bowl.

2. Add the turkey and mix until just blended.

3. Shape into 8 burger patties, about three inches thick.

4. Heat a skillet coated with cooking spray over a medium heat. Cook the burgers, turning once, for 6 minutes or until well browned and a thermometer inserted in the thickest portion registers 74 degrees.

5. Place the bottoms of two dinners rolls on four plates. Top with one piece of lettuce and one tomato slice. Place one burger on each and top with the avocado and the top of the roll.
