Caramelised Onion Tartlets

Ingredients

oil spray
1 sheet frozen reduced-fat puff pastry, thawed
2 red onions, thinly sliced
3 tsp balsamic vinegar
1⁄2 tsp dried thyme or oregano
30g goat’s cheese, crumbled
sprigs of fresh thyme
cracked pepper

Method

Preheat oven to 200°C. Line an oven tray with baking paper.

Heat a heavy-based frying pan over medium heat and spray generously with oil. Add onions and cook for 30–40 minutes over very low heat or until the onion mixture is thick and brown. Add vinegar and dried herbs and cook for a further 3 minutes. Adjust seasoning.

Meanwhile, cut the pastry into 4 x 4 squares to create 16 tarts. Using a sharp knife, score the edge of each tart 1⁄2cm from the edge, making sure not to cut all the way through. Prick the base of each tart with a fork 3–4 times. Place on oven tray and cook for 15–20 minutes or until golden brown.

Spread each tart with the onion mixture and scatter with goat’s cheese, a sprig of fresh thyme and season with black pepper. Serve warm or at room temperature.
