Cookie crisps with Decadent Dark Chocolate Sauce

Ingredients

Sauce
120 g dark chocolate
1⁄2 cup whole milk
2 tablespoons packed brown sugar
Cookies
2cups wholemeal pastry flour
2 tablespoons flaxseed
1⁄2 teaspoon baking soda
1⁄4 teaspoon salt
1 teaspoon cinnamon
1⁄2 teaspoon ground ginger
4 tablespoons trans-free margarine, softened
2 tablespoons canola oil
1⁄3 cup packed dark brown sugar
1⁄3 cup honey
1 large egg

Method

Chocolate sauce:
Heat the chocolate, milk and sugar in a small saucepan over low heat. Stir constantly until melted and smooth. Serve warm.

Cookies:
1. Preheat the oven to 180°C. Coat 2 baking sheets with cooking spray.
2. Combine the flour, flaxseed, baking soda, salt, cinnamon and ginger in a medium bowl. Set aside.
3. Cream the margarine, oil, sugar, honey and egg with a hand mixer. Add the reserved dry ingredients and stir until combined.
4. Drop by rounded tablespoons on the prepared baking sheets and bake for 10 to 12 minutes or until golden. Let cool on the trays for 5 minutes. Transfer to a rack to cool completely.
