1. Preheat oven to 180°C. Heat the oil in a medium heavy-based pan and add swede, onion and chorizo. Cook, stirring often, for 3-4 minutes or until golden.
2. Add tomato, wine, sugar and thyme, stir to combine and cook for 2-3 minutes. Transfer mixture to an ovenproof dish, cover and bake for 25-30 minutes or until swede is tender. Uncover 5 minutes before the end of the cooking time, to brown. Serve immediately.
Chorizo, a spicy Spanish sausage, is available from most delis. A spicy Italian sausage or salami can be used in its place.
