Fish Skewers with Peach and Salsa Sauce

A tasty salsa and fish combination.

Ingredients

3/4 cup Goulburn Valley Peach Slices
1/3 cup coriander leaves
1 Lebanese cucumber
2 small red chillies
1 teaspoon lime rind
750g firm white fish fillets
8 bamboo skewers
1 tablespoon oil

Method

1. Combine 3/4 cup chopped Goulburn Valley Peach Slices, 1/3 cup coriander leaves, 1 halved and thinly sliced Lebanese cucumber, 2 small seeded and finely chopped red chillies and 1 teaspoon lime rind.
2. Thread 750g chopped firm white fish fillets onto 8 bamboo skewers. Pan-fry skewers in 1 tablespoon oil. Serve skewers on watercress.
3. Serve with salsa. Drizzle with lime juice.
