Ingredients
600g Fresh Chicken Thigh Fillets Skin Off, quartered
2 large red capsicums, cut into 3cm cubes
1/2 x 35g sachet Old El Paso Taco Seasoning
2 large corn cobs
1/4 small avocado, finely chopped
3 green spring onions, finely chopped
250g grape tomatoes, halved
200g jar Old El Paso Mild Taco Sauce
baby rocket leaves, to serve
Method
1. Thread chicken and capsicum onto 8 bamboo skewers. Sprinkle evenly with taco seasoning. Char-grill skewers until browned all over and cooked through.
2. Meanwhile, char-grill corn cobs until browned all over. Using a small sharp knife, cut corn from cobs. Combine corn and remaining ingredients in a medium bowl.
3. Serve skewers on salsa. Serve with baby rocket leaves.
