Chinese-Style Spicy Chicken Wings

Twisted Noodle Bar, in Sydney's Chinatown, offers an at-home version of its popular entree for Chinese New Year.

Ingredients

6 chicken wings
2 tsp fresh red chilli, seeds removed, diced
3 tsp Maggi seasoning or soy sauce
1 tsp sugar
2 tsp potato starch
pinch black pepper

Method

Mix chilli, soy sauce and sugar in a bowl. Add potato starch and mix. Massage mixture into chicken wings for 2 minutes. Let the chicken wings marinate for 30 minutes. Set the stove to a low heat. Fry chicken wings on one side for 2 minutes, then turn over for another 2 minutes. Turn over again for 2 minutes, or until golden brown.

Notes

Variation: Instead of 3 tsp Maggi seasoning or soy sauce, try 2 tsp soy sauce and 1 tsp chicken stock powder.
