Zucchini And Parmesan Salad

Try this salad with raw zucchini for fresh flavour.

Ingredients

2 zucchini, thinly sliced
2 handfuls rocket leaves
shaved parmesan to scatter
extra virgin olive oil for dressing
balsamic vinegar for dressing

Method

Divide zucchini slices, rocket and parmesan between 4 serving plates, season with sea salt and ground black pepper, and dress lightly with olive oil and balsamic vinegar. Serve immediately.
