Raspberry oatmeal slice

Ingredients

1/2 cup firmly packed brown sugar
1 cup plain flour
1/2 teaspoon bicarb
1/2 cup traditional rolled oats
120g butter, softened
1/2 cup raspberry or strawberry jam

Method

1. Preheat oven to moderate 180 C. Grease and line a 20cm square slice pan with baking paper. In a medium bowl, mix together sugar, flour, bicarb and oats and then use clean hands to rub in the butter to form a crumbly mix.

2. Cover the base of the slice pan evenly with 2 full cups of the oat mixture, using hands to press in evenly. Spread the jam over this layer leaving 1cm of space around the edges.

3. Roughly sprinkle the remaining oat mixture over the top of the jam. Bake for 35 min or until browned. Cool in the pan for 15 min before cutting into pieces to serve.
