Prosciutto & asparagus caesar salad

Ingredients

16 slices prosciutto
3 cups sourdough bread,torn into chunks
8 eggs
1 bunch asparagus, trimmed
10 cups cos lettuce, cut into 2cm strips
2/3 cup creamy Caesar salad dressing

Method

1. Preheat the oven to 180 C. Place a wire rack on a baking tray lined with baking paper. Place the prosciutto on the rack. Toss sourdough chunks with 1-2 tablespoons of olive oil. Place on the baking sheet. Cook prosciutto and croutons for 4-5 min or until prosciutto is crisp and croutons are golden.

2. Place the eggs in a large pan of room-temperature water and bring to the boil. Add the asparagus and boil both eggs and asparagus for exactly 3 min. Drain and refresh both under cold water. Peel the eggs immediately and cut them into halves.

3. Place lettuce in the base of a large salad bowl and top with eggs, prosciutto and asparagus. Drizzle with a little dressing then scatter over croutons before finishing with remaining dressing. Garnish with shaved parmesan cheese and black pepper.
