Lunchbox Pastries

Ingredients

2 small carrots, finely grated
1 onion, finely grated
3 small potatoes, finely grated
300g beef mince
1/2 cup frozen peas
1 teaspoon dried mixed herbs
6 sheets puff pastry, slightly thawed

Method

1. Preheat the oven to 200 C. Lightly grease and line 2 baking trays with baking paper. In a large bowl, combine all ingredients except pastry. Add salt and pepper to taste.

2. Cut each pastry sheet into 4 equal-size squares. Put a heaped tablespoon of the mixture into the centre of each square of pastry.

3. Pull one corner of pastry to the other corner to make a pastie shape and pinch the edges together. Place onto baking trays and prick each one with a fork. Brush with a little egg. Bake for 20-25 min or until cooked through.
