Light asian soup

Ingredients

2 x 85g packets two-minute noodles, oriental flavour
3 cups mixed vegies, such as trimmed button mushrooms, finely sliced zucchini and baby spinach leaves packet silken tofu, cut into 2cm pieces
3 spring/green onions, finely sliced

Method

1. Bring 4 cups water to the boil in a saucepan. Add the noodles, flavour sachets and vegetables. Bring to the boil. Simmer for 2-3 min.

2. Remove from heat and add tofu. Stand 2-3 min. Divide into bowls and serve topped with onions.
