Prosciutto Avocado Wraps

Ingredients

1 butter lettuce
6 Lebanese bread rounds
180g tub bocconcini cheese, drained, thinly sliced
2 tomatoes, thinly sliced
2 x 100g packets thinly sliced prosciutto
1 avocado, thinly sliced


BARBECUE CREAM CHEESE

2/3 cup spreadable cream cheese, at room temperature
1/4 cup barbecue sauce
1 1/2 tblsps wholegrain mustard
Salt and pepper, to taste

Method

1 To make the barbecue cream cheese, combine all ingredients in a bowl. Mix well.


2 Separate lettuce leaves. Rinse leaves under cold water. Drain. Pat dry with absorbent paper.


3 To assemble wraps, evenly spread barbecue cream cheese over bread rounds. Divide lettuce, bocconcini, sliced tomatoes, prosciutto and avocado over the top. Season with salt and pepper. Roll up tightly to enclose. Cut in half to serve.
